Aillio sells coffee roasters rather than coffee, and its whole range is built around one machine family, the Bullet. Three models are offered: the Bullet R2 Pro with a 1.2 kg capacity, the Bullet R2 with a 1 kg capacity, and the Bullet R1, which is no longer available. Each one uses induction heating, rated at 2300W on the Pro, 1700W on the R2 and 1550W on the R1. IBTS real-time temperature monitoring appears on all three, and FlowSense airflow control on the two current models. The machines are engineered in Denmark and manufactured in Taiwan. More than 16,000 Bullet units have been sold, and roasting takes place in over 100 countries.

The software side is as central as the hardware. RoasTime, available for Mac, Windows and Linux, handles roast logging, analysis and automation. Roast.World is the cloud community tied to it, where roasting data can be synced, cupping notes added and new beans and profiles searched. Testimonials come from specialty roasters such as Kaffi Nanoroastery, Prototype Coffee and Eleven Speed Coffee, several of whom describe growing from a Bullet into larger commercial machines. The Bullet R2 Pro adds a barometric pressure sensor, a hybrid LED/OLED display and a choice of cooling trays, while the R2 comes with the standard tray.
